Caribe Coffee Co. Ltd ethically sources it's coffee from farm cooperatives. This particular farm is called Los Pajuiles in the village farm region of Cofradia 7Km North of San Miguelito, Honduras. The farmer, Jose Maximo, is a third generation farmer. He left school at second grade and worked as a farm labourer elsewhere, when old enough, he completed compulsory military service and finished his education in the military. After returning home to the family business, he married Guillermina and they had 6 children. When his grandfather died the farm was inherited by other family members leaving Jose without lands to farm. He used his savings and sold livestock to buy some land and machinery. His farm has steadily grown to 8 hectares and he now ships his coffee beans internationally through a farm cooperative. The farm is home to various native and protected fauna, including agoutis, squirrels and parrots and is currently part of fruit and timber reforestation projects.
The best way to explain what microlot coffee is, is this apple orchard analogy: Imagine you have an orchard and most of the trees produce great apples, but you’ve noticed that in one spot of the orchard the apples are phenomenal. Like out of this world better. These apples taste better, are crispier and juicer. So you decide to fence these babies off, water them specially, listen to their every whim and need, and give them all the special attention they deserve. Then when it comes time to harvest, you keep them aside and process them separately, so they are delightfully shiny and good looking.
